Roast vegetable and feta salad

 

The best winter salad

Ingredients:
1/4 Pumpkin
6 Small Orange Kumara
3-4 Carrots
1 Beetroot (optional)
Half block of feta cheese

Preparation:
Get a baking tray and line with baking paper. 
Cut up the veggies
Place them all in the baking tray
Bake in the oven on 180 degrees for 25 -35 mins (checking to see when they are cooked and crispy)
Once vegetable are cooked and cooled slightly place in a bowl and top with Feta

This one is great cold for lunch the next day
