Healthy Peanut Butter Cups

Peanut Butter Cups
Makes 6; Prep 20mins

* 1/4 cup cocoa powder
* 1/4 tsp sea salt
* 1/2 cup coconut oil, melted
* 2 1/2 tbsp rice malt syrup or honey
* 2 tbsp smooth peanut butter or PB2 (from Marthas Backyard)

1. Whisk the cocoa and salt through the melted coconut oil and malt syrup or honey until smooth

2. Put half of the chocolate mixture into six 1/3 cup capacity paper cases set into muffin pan

3. Place in freezer for 5 minutes or until firm to touch

4. Spoon 1tsp of peanut butter onto each hard chocolate base and put back into freezer for another 10mins

5. Take out of freezer and top each cup with the remaining chocolate mixture. Leave them to set for 30mins

6. Once hard, take out of freezer, remove paper cases and serve immediately. Store in the fridge in air tight container
